Chilean Avellina Oil

Originally called Gevuina («Beautiful flower») by the Mapuche Indians of southern Chile, the first Spanish colonizers called it hazelnut, confusing it by its resemblance to European hazelnut, but its flavor is very different. Its oil is obtained from wild hazelnuts (Gevuina Avellana Mol) grown in southern Chile and adjacent places in Argentina, obtained by cold pressing, without chemical processes.

The Chilean wild hazelnut is edible, has great medicinal properties and has been consumed since time immemorial by Mapuche Indians of Southern Chile, who discover many nutritional, aesthetic and medicinal applications. Chilean hazelnut is very nutritious, rich in organic phosphors and vitamin B1, contains a high percentage of fats, sugars, albumin, cellulose, calcium and iron.

The caloric content of the nuts of the hazelnut Mol oscillates between 530 and 660 cal / 100g per fruit. Proteins range from 10 to 25%, sugars from 5 to 20% and lipids from 50 to 60%. As for the lipid composition, saturated fatty acids (5 to 8%), but the unsaturated fatty acids differ in the groups: those with high monounsaturated contents (in particular oleic acid), and those that are high amounts of polyunsaturated (especially linoleic acid) (SOLÀ and MASANA, 2002).
